Both have been said before, but I'll mention them again:
Kingdom hearts:
I only got the chance to play those games a few months back, and the graphics didn't burn my eyes with their awful PS2 level quality.
On top of that the gameplay was slick, smooth and some of the best I've played in years.
Why has number 3 not been made yet?
The Wind Waker:
Seriously, this game could be coming out today, and the graphics still look top notch.
Colourful, fresh, VERY well animated, and tons of attention to little details that you just don't really see anymore in games.
The gameplay is Zelda at the best it's ever been, with a fantastic music score that morphs and changes depending on the current actions of the player. Ingenious. Why has this not been applied to every game? Why did Twilight Princess drop this?
The bosses are fun, plentiful, huge and interesting. The final battle is the best damn sword fight gaming has seen to date.
Huge open world, loads of places to explore, tons of mini-games and side quests.
And on top of that, the story is utterly charming and doesn't wallow in Ocarina of Time's glory, while still paying homage to it, and giving Hyrule a tearful farewell.
