Also, if you're going to be reading manga, have a read of History's Strongest Disciple Kenichi and Medaka Box, Kenichi is a long-running favourite and MB is one I've recently found and am a big fan of :)

Welcome to the NHK is very good. As is Angel beats. Gurren Lagann is very enjoyable, though I haven't finished it yet. FLCL is the brilliants, and it's only 7 episodes or something. Lucky star and K-ON should definitely be watched. The melancholy of Haruhi Suzumiya is also good.
Code geass and Death note also make the list.

There are of course plenty more.

Well lots of people are putting out personal favourites and you could get an endless list of that, but for the biggest 'major series' you missed the top 3 unanimous choices would probably be Death Note, Tengen Toppa Gurren Lagann, and The Melancholy of Haruhi Suzumiya. Runner up would be either Clannad: After Story or Code Geass, depending on your preference (I tried Clannad but it retained too much of a 'dating sim' vibe for me).

I'll leave out some of the other fantastic ones simply because they've already been said.

Oh and if you don't want to catch up with One Piece (or Naruto or Bleach or whatever, OP's the best anyway...) in their anime forms, read the manga! It's much quicker and it would really be a shame to miss out on those stories for such a silly reason! :p
I'll second Durarara!!, N.H.K., and Hayate no Gotoku (I haven't seen the other ones). N.H.K. and Hayate already have dubs available (though I don't know how good since I saw both series in Japanese) and Durarara will be coming out with one very soon.

There are two Melancholy series?

I've only ever heard of Haruhi.

Gundam 00 (season 1 is great, season 2 not so much, and the movie is ok)
Sengoku Basara (one of the few case i'd recommend watching it subbed mainly due to date masamunes very gratuitous engrish)
