While I'm tempted to say Cowboy Bebop (Ba-dup Ba-dup Ba-dup Ba-dup BA-DOW!), I will have to go with Tengen Toppa Gurren Lagann. I watched the entire series via terrible Youtube quality (too poor to afford purchasing it and I don't even know where it's sold ;_;) and my jaw was still hanging open in shock AT LEAST once per episode, and by the final I was locked in a permanent "OH SHI-" expression. Just amazing.

And yes, I realise both of these have been mentioned plenty of times already, but their quality truly cannot be overstated.

Favourite is quite hard to say, it changes depending on my mood.

Angel Beats was great and I wish it had been a full 26 episode series rather than a 13 as it got a bit rushed. But it was still awesome!

I have a few...
Naoki Urasawa's Monster (Manga) was pretty good, and fairly intense at times as well.

Claymore (Anime & Manga) has great action scenes and there's some nice character development in there. Both the manga and the anime were great, the manga for it's extra content and longer storyline (the anime ended way before the manga did), and the anime for it's better pacing and the fact that some scenes were more drawn out.

Death Note (Anime) Great animation quality and music, the whole thing was brilliant. I also checked out the manga and, while good, just wasn't as epic.

Gurren Lagann (Anime) Super special awesome, 'nuff said.

Mushishi, D.Gray-Man, Love Hina, Maison Ikkoku, Fullmetal Alchemist, Jing: King of Bandits and Jing: King of Bandits Twilight Tales were pretty good too. There's more but that's all I can think of at the moment.
EDIT: Gah can't believe I forgot this! Neon Genesis Evangelion is definitely my favorite anime!

Deathnote is an anime unlike others, it is more pyschological then action and thats why I love it

If you liked Death Note then you should check out Neon Genesis Evangelion, it has some action but it's pretty psychological.

Elfen Lied is my favourite. But I also love Ghost in the Shell: Stand Alone Complex, When They Cry, Berserk, Gantz and Full Metal Alchemist, both the original and Brotherhood.

Strangely enough, I didn't plan on a lot of them being ultra-violent..
I heartily agree with this list. I just went through and watched FMA brotherhood in the last couple weeks, I loved it.

OT: My list is very similar to yours: FMA (original and Brotherhood), DeathNote, Higurashi: When they cry, Elfen Leid. Deathnote prob the favorite, but Higurashi is a close second.
