Im currently replaying MGS2 for reasons related to numerous brain malfunctions. The fight with all the Metal Gear Rays, I think I had to kill about 20 of them. They arnt hard to beat individually, but on hard mode fighting 3 at a time for about an hour is just tedious.

I've had several like this. Let's go through them:
Everyone's mentioned RAAM, so I think I'll just mention him and be done.

One who deserves special mention here is Nebilhim from Tales of the Abyss. First of all, she's level 100 (quick note: the final boss is in the 60s, which is the level cap for all enemies outside the colosseum), and has almost full stats for everything, meaning All-Divide (rare item that halves damage done by both enemies and allies. They're only useful on bonus fights) or die. In addition, she has a rare, one of a kind item you have to steal early on, or you'll never see it again, though you can only steal if before battle you equiped an item to a skill. Plus, there's only a 25% chance you'll get it if you attempt to steal. As for her attacks, she has every high powered spell in the game, AND she can freeze time later on. You can only carry 16 of each item, meaning you only have 16 nonspell revives. After finally defeating her, I went to claim my reward, only to find out that to get the Title for beating her, you had to do it on a harder difficulty. That's right, the bonus boss was laughing at me from beyond the grave.

Another Tales Bonus Boss dealing with collecting cursed weapons is even worse. Let's look at Vesperia, where if you decided to collect the cursed weapons because you love sidequests, you're in for a nasty surprise. Turns out, the final boss gets another form, on that is several levels past his previous one. This wouldn't be as bad, if there were any mention of this happening before hand (hell, even the strategy guide won't warn you about it).

Dead Rising was mentioned here several times, but I never saw the convicts on it. Not only do they appear after your first boss battle, but it will likely be night time then (meaning super zombies). They have three attacks, four health bars, and at this point in the game you're probably not going to be equiped for them. Also, they're between you and near suicidal survivor, meaning 100%ists are gonna be pissed.

However, I'd like to point out that back in the days of the NES, a lot of bosses were like this. In fact, some were so hard, they made the game multiplayer. For example, with Megaman we did this when I was a kid: you played through not to win the level, but to get further than the last player. If you got to the boss, the amount of life left was what mattered. If you were able to beat him, the entire room let out an applause (though no one would write down the code since you had no more lives more often than not).

The three headed tenticle thing in Half-life seemed impossible at the time, I didn't realise for a while that you weren't suposed to fight it.

There have been others but those games were so forgetable

Belial from Diablo 2. I've only ever managed to solo him with a paladin, My barbarian just couldn't DPS him (Paladin had holy freeze) and my sorc got ripped as soon as he got to melee... Which took all of 1 second in that room.

The Archdemon. In his defense, I was only a rogue. I was doing 1 to 3 damage a round while he missed and my party lay dead around me.

What? No one mentioned Leviathan from Dead Space yet?!
Leviathan in Dead Space is the Final boss right? I never had an issues with those 2 The Air purifier boss in Dead Space was the toughest boss for me in that game what with it's limited window of being vulnerable and massisve attack range.
Leviathan is the butthole-lookin' thing you fight early on in the game, with three tentacles and spews balls of god-knows-what at you. The end boss is The Hive Mind or something.

Elizabeth. Greene. Blargh. She wasn't even that hard, just long. And yes, I know there's an obvious joke there. Don't say it.
You know what... Oh... You said don't say it... Either way I agree, what an annoying boss.

OT: Something like the Earth Tyrant on FF XII, I stumbled upon him way to early, and thought I needed to fight him, I was about 15 levels underpowered, and was getting thoroughly demolished, I managed it though, to find some thing I should have gotten later...

Oh yeah, and the first few bosses from Lost Oddesy, sunnova ***** they were not fun...
And maybe Sephiroth from Kingdom Hearts... His health bar actually went to far, so they had to add in a shit load of invisible ones that you could not see...
Want a truly evil FF XII boss? Elder Wyrm.
Ffffuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuu-

On Topic: Elder 'Fuck off you piece of cheap-ass shit' Wyrm.

You come across him about 10 levels lower than you should, he has a cone-shaped AoE that, if you get hit by it, make every attack he has 3x as powerful, and to add to that, he isn't even on his own. He's got two Tree things beating the crap out of you too. His defence is sky-high, and his offense is crushing, especially with that fireball attack.

Also, I'm going to add this. Ninety Nine Nights' King of Night. What a pain in the ass...

Halo 2's Tartarus, the final boss. He's sooo hard to kill. Not only that, he has a MASSIVE hammer which can kill you in one hit. And he's fast.

Come to think of it, every one of Halo 3 and ODST's Brute Chieftains, if they count (sort of like mini-bosses or very high-powered enemies). My normal tactic for getting rid of meddling Brutes is Plasma/Spike grenade + face/groin. They just bounce off these guys, though.

The original Mass Effect also had a few. I remember stumbling across Wrex's personal mission way before I was a high enough level, and that bloody Tonn Actus guy just would not die, no matter how many sniper rounds I pumped into him.

Izual in Diablo II. My finger always hurt after defeating him.
You can hold it down... They keep attacking.

Ot: The second last boss in the game Van Hellsing, it was the first and last movie game I played.

Anyway, she required the use of the chaingun, which I got about 40 seconds before the fight. However for the entire rest of the game the Crossbow was the best against vampires, of which she was one.

Needless to say I gave up and came back to it a year later. The thing took less than 20 mins from where I was to the end credits.

I was just playing the new Transformers and that giant spaceship the decepticons have to fight (the one that keeps spitting out the air-bots) took forever. I used the turrets and everything but it still took forever. I thought I was missing something (some sort of weak point or alternative method) so I looked online and I was doing it right apparently: it's just supposed to take an hour I guess.
There were a couple in No More Heroes too.
And Zeus in God of War 2 comes to mind.

Some of the heros in LOTR: Conquest.
Specifically, Wormtongue in the good campaign, and Aragorn in the evil campaign.

LoL, so it's the same guy then.

Gears of War when you get a bugged General Raam, ie. ************ is invincible. And sometimes he seems to be perma-bugged until you reset the console and play the level again. I once spent half an hour running around that last train carriage, dodging krill and his minigun, eventually running out of ammo and trying to chainsaw him. Yeah, it didn't work.
Seems to vary like crazy. I've done everything from dropping him with a few Lancer clips to using every scrap of ammo I had then using the troika for as long as it takes his Krill to rape me. Luckily there is also a way to get him stuck on the other side of a box allowing you to fight against his unfairness with your own. Not really the point of a good boss fight but if that bastard cheats you're damn right I will as well.

Wait, Raam isn't supposed to take all of your ammo to beat? I went through a full torque bow, sniper rifle, and pistol. It was my last grenade that killed him.

Most recently I would have to say Jed from Dead Rising: Case Zero. You can even find a 50. Cal on the roof and it takes 15 shots to the head to kill him with it. Not to mention his ranged attack will always knock you down and he will often bum-rush you and then impale you. After fighting zombies that couldn't take a wrench to the face it's quite a difference.

The leaders of whatever gang you're shooting in Mafia 2

It's not that they're indistructible or dangerous. They don't even have healthbars! It's just that whereas your average goon dies after two bodyshots or a headshot, THE BOSS takes like NINE headshots

Why?

No reason at all. They're not more dangerous, they're not a huge Must-Kill-Quickly threat. It just seems completley pointless and damaging to the "realism" they spend all game creating
Yeah, but at the same time it would have been a bit of a buzzkill to work up to a boss and just be able to cap him once in the head and win. Still, they should have just made him be a cheap little ass instead of having a titanium-plated skull.
