Last actual "boss" I fought... probably Davison [http://fallout.wikia.com/wiki/Davison] the Super Mutant.

...Do I get the jump on him from down a hallway with a weapon I actually own the way I did in-game? If so, I could put ten 7.62 Russian rounds in his face before he could scream properly... if not, ouch (unless I get my pick from the armory of my choice. I'd have a small chance of putting him down in close quarters with a good assault carbine).

First you have to define what constitutes a "boss". I recently beat a football (handegg) team from Facebook's Madden game that was the best team of the rounds and only unlocked after you beat the other, weaker teams. Would that be a boss? If so, then I would lose and probably get an arm broken.

If not, then I have to take on the mysterious chick from who turns out to be a princess from the other continent in Lost Kingdoms. She was weak as hell but her mosters would probably kill me in an instant. The question becomes: can I "defeat" her before she can summon a monster that can defeat me? The answer is probably no.

A giant zombie-werewolf from Painkiller? Sounded hard enough, until I saw the boarded up ceiling, blew that open, jumped over a pit of hellfire and badda bing badda boom dead zombie-werewolf and I'm out of the catacombs of Hell.

Granted, jumping over a pit of never-ending torture and suffering and burning and...and...I dunno, burning egg smell would make me a bit nervous...
