I really like Johnny Cash's version of Hurt and Nightwish's version of Phantom of the Opera. After that, I don't care for covers.

Iron and Wine cover of such great heights is pretty amazing
And Andy Mckee's cover of Africa by Toto is insanely awesome.

Guns' n Roses cover of The Rolling Stone's "Sympathy for the Devil."

Axl just sounds more like the devil than Mick ever could.

Reel Big Fish's Take on me.
I suggest... not paying too much attention to the video as it is quite possibly the worst one of all time.

It ranks up with BROKENCYDE in levels of ghastliness.
They also did a pretty good Hungry Like the Wolf.

Spoon covering The Natural History's Don't You Evah.

Original: http://www.youtube.com/watch?v=kj7Gt8QVv38
Cover: http://www.youtube.com/watch?v=nPdP1jBfxzo&feature=fvw

I believe that's sufficiently obscure.

May I present to you..

Seriously though, the one I've listened to the most in the past week or so would be modwheelmood's cover of NIN's The Great Destroyer.

Escape The Fate's cover of Smooth by Carlos Santana. I love it more than the original.

Ok, I tried to like that but it was really, really awful. But then, I'm one of the few people who still like the original version...

Off the top of my head, Zebrahead's cover of Wannabe by the Spice Girls is pretty fun.

I enjoyed the Blue Man Group's cover of The Who's Baba O'Riley (featuring Tracy Bonham on vocals) and their cover of White Rabbit.

Also, because I haven't seen anyone mention it when almost everyone's heard it: the They Might Be Giants of Istanbul (Not Constantinople).

I know, it's an obvious one, but it's still great.

That was never a cover. the lyrics were written by Bob Dylan and thats it. the rest is all Hendrix.
Nope, it's a cover. Dylan wrote it and recorded it first and it is infact on his album John Wesley Harding.

Hendrix got some promotional tapes from Dylan's manager, heard the song, loved it and covered it, having his version released about 6 months later Dylan's version had come out.

Look it up, it is a cover song.
Too bad Bob Dylan can't sing for shit.

=P
Its certainly an aquired taste. Its mostly because he tries to make himself sound like Woody Guthrie.

Sea of Treachery's cover of "Misery Business"

Jimi's cover of "All Along the Watchtower"

Rise Against's cover of "Any Way You Want It"

Disturbed's cover of "Land of Confusion"

That is all.

The Dropkick Murphy's version of "Fields of Athenry" is pretty damn good, but i wouldn't call it a cover, per se, cuz they 'punk up' a lot of traditonal Irish songs.

That's the DKM's version of it, but you can find a bunch of others on Youtube besides the traditional on youtube, so look it up if interested.

For a straight up cover, i'm putting down Nirvana's cover of The Meatpuppets' "Lake of Fire".

I'd have to say Pearl Jam's cover of The Who's "Love Reign O'er Me". Only cover I've ever liked, and IMO is better than the original
