I liked Brutal Legend's ending a lot. There's the comedy, the callback, and the foreshadowing all rolled into one-- it's very well done.

Aside from that, I think that the ending to The Two Thrones was great; It still sends shivers down my spine.

StarCraft. The ends of each of the campaigns were absolutely brilliant. Arcturus Mengsk's speech at the end of the Terran campaign is one of the best cinematics in gaming, in my opinion.

Portal also had a great ending. It redefined the whole notion of turning a system against itself, using it to her own advantage. Plus it left so much room open for interpretation, both for Chell and GLaDOS.

Devil May Cry 3's "Ending". (Not the special one, when you kill 100 Demons) Devils never Cry was just fantastic.

I dont know why, but the Silent Hill 2 dog ending always makes me smile. It's better knowing that all those fucking monsters are being controlled by a loveable pooch.

And Assassin's Creed got me really pupmed up.

MGS3 was an awesome ending, I would say MGS2 but the unskippably HUGE video/monologue that snake does is kind of annoying.

Also, portal and half life 2(although I can't say thats an ending because it continues onwards). Damn you valve and your awesome releases.

Aswell as those, the Cod4 ending is awesome
