The Icewind Dale series has some of the best fantasy music I've ever heard from any medium. It's also the only game I've ever actively hunted down a copy of the soundtrack for. Baldur's Gate 2 may be the better game, and its own soundtrack is far from shabby itself, but Icewind Dale has always had the better music I've found.
Meanwhile for more sci-fi themes there's Freespace 2 which has an incredible soundtrack. Seriously, listen to some of this stuff, you'll be blown away! Imagine listening to that music as you dodge between massive battle-cruisers, your ship shaking side to side as turrets fire flak to try and turn back the waves of lighter fighters, alarms screaming and shields beeping alerts as enemy fighters try to lock onto you.. it's incredible. Love that game!

Chrono Cross wins this one, hands down. If you really want a sample, look up Chrono Cross OST on Youtube and pick... anything. It's all fantastic.

Monkey Island series so easily. Love the theme so much I'm teaching myself to play it on recorder (still have my old one from primary school), or at least a variation of it.
