Armored Core.

Mainly because it takes me waaaaay back, but there's just something soothing about it.

Also, the theme...DUN-DUN-DA-DUN 'dun-dun-da-dun' DUN-DUN-DA-DUN...okay, not so much the theme, but still, it calms me down.

I think De Blob is a very relaxing game.
It's in the music. The music is very cheerful and reacts to your actions and it's all done very well.
It's just fun, painting the town red (and 6 other vibrant colours).

When I want to relax I just play an extremely violent game, and then play some incredibly happy, slow, peaceful, relaxing music in the background. The contrast between the two is surprisingly awesome.

Takashi games are good for that. Katamari or NobyNoby Boy.

San Andreas can be pretty mellow if you just want to drive around in a wacky car while listening to Master Sounds.
