I wholeheartedly second this.
@OP: Evangelion has lots of bombastic fight scenes involving giant monsters and futuristic bio-mechas, but is at the same time FAR from the status of mindless entertainment. I'd even go as far as saying that it will most likely boggle your mind the first time you watch it, especially the 2-part ending... and if you don't like that ending, watch the movie 'End of Evangelion', which is an official alternate ending to the series.
Seriously, if you're looking for excellent sci-fi anime with actual depth you cannot, repeat, cannot pass up Neon Genesis Evangelion.

Honestly, if you want something that involves combat but has physiological aspects I'd say watch either Bokurano or Gantz. After watching one of those you'd be stuck pondering a few things.
OR, if you want a sci/fi anime involving mechs I'd suggest Full Metal Panic. Althought it's hard to find good subs, and if you watch it with dubs I have no faith in you as an anime fan.

yeah i'm kinda new to non shamefully watching anime and i would say full metal alchemist. i loved that, i watched it all in one sitting plus the movie liked it way better than naruto and bleach. was going to look into trigun or elfin leid ( the latter of which i saw the abriged seires already) today but i procrastinated maybe tomorrow or somthing

I see your Fullmetal Alchemist and raise you a Fullmetal Alchemist: Brotherhood, the new incarnation based much closer to the manga (which, on the whole, I actually like more). It's subtitled on Funimation's website for now. Not sure when they'll undoubtedly dub it.

And I know these have been mentioned already, but:
Cowboy Bebop, because it's still one of the best shows I've seen after 10 years
Ergo Proxy, since it's the great anime that no one's ever seen.
Oh, and FLCL.

Very much Nanoha, it's in my avatar for a reason. However, with the first season, you might want to skip to about episode 6 since that's when the plot really begins. A's, however, is just awesomeness.

Fullmetal Alchemist (both series) is the platonic form of a shonen series.

Gurren Lagann is concentrated awesome.

I cautiously recommend Evangelion, but then again I'm one of those mutants who doesn't hate Shinji, and a lot of other people seem to hate it and have good reason to, so your mileage may vary.

And, since I'm obliged to do so by internet law, Cowboy Bebop. The dubbing is often considered better than the original Japanese, and it's pretty much everyone's favorite anime series.

For more ideas for anime to watch, just browse TV Tropes. Believe me, you'll find some; it's how I got into Nanoha and Gurren Lagann.

Death Note. Makes a change in anime which focuses on drama and thriller rather than superhuman samurais and people producing fireballs from their hands.

I haven't seen Texhnolyze being mentioned, it's a pretty awesome cyberpunk anime. Odd (not in the typical-Japanese-craziness kind of way) but very interesting. Definitely an anime worth watching.
