If you're looking for sci-fi or fantasy...

Tengen Toppa Gurren Lagann is hilarious. Totally worth viewing.

Ghost in the Shell

Cowboy Bebbop

Speed Grapher

Gundam (though there are different series of Gundam and it's really hit and miss, so you gotta just find a series you like. I like Gundam Wing.)

Death Note is cool.

Hellsing is awesome.

Gankutsuou: Count of Monte Cristo (That's a personal favorite of mine. Cause it's set in the future and made of win.)

Higurashi no Naku Koro Ni is flippin crazy and bloody and crazy but cool.

Awesome scene from higurashi.

Hahaha, that show is so batshit crazy. The first time I saw that series--when he got them with the baseball bat, I was like, "Holy crap!"

Or the one where....I think it was Mion? Like, shows up at his door and scares the bejesus out of him.

I need to watch that again.

Funk.. recommending Gundam? What sort of backwards dimension is this!?
/Sarcasm :D

Anywho: Gantz. That's practically what defines "Sci-Fi Anime" for me.
Amazingly, you're the only other person besides me to recommend that.

I thought it was fairly popular.

Gundam, it truly is a very good one, but I'd try to find the original dub/sub by Sotsu-Sunrise before cartoon network got to it. They ruined it. >_<

I'll try to give a wide variety of anime here.

1.Tengo Toppa Gurren Langann(By far the awesomest anime series there is. In the final episode a fight occurs in which the robots throw galaxies at each other.)

2.The Melancholy of Haruhi Suzumiya(This is my personal favorite but I've read all the books which I consider some of the best literature I've read so I'm biased.)
Neon Genesis Evangelion(Awesome Sci-fi but prepare to be scarred for life. I saw episode 22 at the age of 13. Anyone who knows what I'm talking about?
3.Eureka 7
4.Code Geass
5.FLCL
6.Clannad
7. Canaan
8.Macross Frontier(hell, while you're at it, watch the whole macross series)

Sci-fi/fantasy? Slayers(all of em), Soul Eater, Shaman King, Gurren Lagann, Zombie-Loan, Darker than Black. And of course FLCL. Can't believe I forgot Haruhi Suzumiya. That has some major Sci-fi/Fantasy elements to it.

If you're not an action junkie who needs to see something get killed every few seconds watch Neon Genesis Evangelion, the only anime I've seen that is truly deep. Also it has two movies, both are good.

Man, I've just finished watching Fate/Stay Night. 24 episodes of an incredible anime. Great fighting scenes and plot, but don't expect anything like Bleach - fights rarely last more than 5 minutes and there is not an episode where there is battle after battle after battle (like the last episode of Bleach's filler).

It's just that it has such a God damn sad ending :/

Samurai 7 (retelling of the seven samurai story in a sci-fi setting)
Seirei no Moribito (fantasy story with awesome character development)
Last Exile (airships!!!)
Crest/Banner of the Stars (great space opera)
Full Metal Panic (awesome mecha action and lots of humour)
Planetes (near future sci-fi about the early days of space colonization)
