Well, always like to recommend Azumanga Diaoh, but it's a hit-or-miss anime for a lot of people who don't like the gag-based stuff.
If only to help rocket it to the top of your list, Gurren Lagann. Seriously. If you're a guy, it'll make you a man. If you're a chick, it'll make you a guy, then a man. If you're a chick, and you want to remain one, it'll shrug its shoulders, and make you awesome.
I would also recommend anything by Studio Ghibli. They're also nice and family-friendly, so you can watch with relatives, and sweet, so they're a good idea for dates as well.
Neon Genesis Eva, if only to make you more sad. That'll teach you.
Spice and Wolf to balance out all that action.
I have a friend who will swear up and down that Fighting Spirit is what'll put hair on your chest, and if the manga is any indicator, it will. And it's nice to have some character development.
Grand Teacher Onizuka is just something I really enjoyed reading.
