Katamari Damacy 1 and 2 for the PS2. Fell in love with that music and got me into Japanese pop music.

Not to be a fanboy, but i think Halo's soundtrack is pretty epic. Marty O'Donnel is a musical genius

There are several games with great music.
In no particular order, from the ones I know and remember:

Dungeon Siege

The Witcher

Braid

Arcanum

The song "Still Alive" from both: Portal and Mirror's Edge

Left 4 Dead

Psychonauts

Deus Ex

King's Bounty - The Legend

To name but just a few.

I'm not going to pick a game in general, because there's so many games I consider to have a good soundtrack. Instead, I'm going to go for the two songs I've found most memorable in gaming.

Call of Duty 3 Menu Theme: http://www.youtube.com/watch?v=_fr4iZnovAQ
Mercenaries Playground of Destruction Theme: http://www.youtube.com/watch?v=szzZQwawELc

IMO, best sounds in all gaming.

I could say Fallout 3 for the songs on GNR, but those songs aren't Game soundtracks, those are real old timers.

Games often don't have GAME soundtracks anymore. Big titles on modern hardware have regular soundtracks or cinematic soundtracks.

The music I associate with gaming has a distinct synthetic sound. Nemesis on the MSX or Turrican 2 on the amiga, are examples of game soundtracks.

Shadow Hearts,

Yoshitaka Hirota is f*ckin' epic!

Imbroglio, The Fate ~ Cluster Amaryllis, The 3 Karma, Evil Gate Opener I, II and III, Hardcore to the Brain, Shadow Hearts, Callback From Jesus, Manufacture - Conveyorbelt For Killers, Syu-Ka, City, nde - Near Death Experience, True Voice, ~Icaro Again ~ Advertise II, Fountain of Saint Evel I and II, Death is the Great Leveller, Flame of Strain to Blaze, Astaroth, Deep in Coma, SABBATH -Demon Banquet-, Dead Fingers Talk, Le Gran Luxe, Bythos, Heavy Density, Rum and Tequila, Electric Hallucinations, Dream Catcher, ...

2)
Red Faction,
Dan Wentz knows what he's doin'.
Hell yeah!

3)
Shin Megami Tensei,
Shoji Meguro's work for Lucifer's Call and the two Digital Devil Sagas.

Got to love it.

4)
Final Fantasy IX,
Nobuo Uematsu is the king of emotion, mainly nostalgia, for the love of God, yes.

5)
Jak X, Rayman 3: Hoodlum Havoc, Spyro the Dragon, Half-Life 2, Halo and Legend of Legaia.
Titles with many good songs, but also many forgetable ones. Nonteheless, definitly worth a mention!

Zombies Ate My Neighbors, it had some of the best atmospheric music (Castle of Dr. Tongue) and then sharply contrasts it with some quick upbeat music in other levels...My favorite will always be Chainsaw Hedgemaze Mayhem, http://www.youtube.com/watch?v=3oF9NeU8MYc

Sunset Riders was also pretty awesome and had some really good western style music with great boss music for back then...This video has every theme in one...http://www.youtube.com/watch?v=NpOnM5890LE

Teenage Mutant Ninja Turtles IV: Turtles in Time had an awesome soundtrack as well...Sewer Surfin' rocks...http://www.youtube.com/watch?v=fH-lLbHbG-A

I had to get some lesser known classics in here...for the epicness of every Halo and God of War these days, there was an old soundtrack with just as good music despite sound limitations...

My favorite soundtracks as of now are that of Shadow of the Colossus, Okami, and the Halo series. All have some tracks that suit the mood extremely well, and are also great to listen to whenever you feel like it.
