Spyro the GODDAMNED Dragon, hands down.

I'll be playing that trilogy until the day I die.

Honorable mentions include, but are not limited to: Sly, Jak, Crash Bandicoot, Kingdom Hearts and appropriate sequels thereof.

Edit: Though I felt you meant "Not *from* the current generation" I just wanted to address the difference in wording.

For non-current gen games(Though I wish it was already...) my 1st thought for favorite is Tomba! innovative level design, surprises around every corner,and it never really repeats it's self to often.

Dude way to many to name here.
I'll name a few at least:

Shining force 1 and 2 - Megadrive

phantom crash - gotta be my favourite xbox game of all time.

Grandia - was on the ps 1 and dreamcast, this game puts me in my happy place every time with out fail.

Time Splitters 2 - If you don't know what this is then I feel very sorry for you, Go find a copy and play it, you're missing out.

Also - psyconaughts,okami,front mission 3,phantasy star 2,3 & 4, golden axe, gauntlet, elder scrolls 3, doom, commander keen, duke nukem 3d, kindom hearts, odin sphere, persona 3 & 4, star ocean 2, disgaea 1 & 2, phantom brave, x com, carnage heart, resident evil 3, 4, 0 and the remake, silent hill, dues ex, klonoa, ico, shadow of the colossus, seek and destroy, wing over, onimusha, castlevania symphony of the night, sky gunner, kingdoms under fire heroes, Luna 1 & 2
Annnnd I'll stop there before I take up the whole page, I have a lot of favourite games :)

paper mario. don't know why, I just found the plot and all it's twists and turns, the upgrade systems and the combat unreasonably satisfying for some unknown reason.

Fallout,the first one. Or can you not tell from the wonderful avatar I got from buying it on GOG.com among many other great things with it. I want to get the second one too.

Megaman X 1-3 - Gave me my number one franchise and hero ever, X
OoT, MM - Made me addicted to Zelda
Super Mario RPG - Once I replayed it when I understood English properly, it was the greatest adventure I had ever taken Mario and co. on.
Maui Mallard in Cold Shadow, a bunch of Disney games made by Capcom on the SNES - They're the kind of quality that can only be obtained from those games of old. Good platforming, good gameplay, nice mechanics.

And a whole bunch of others. Those are the ones that pop into my mind right now.

Suikoden, even though it hurts my eyes to play it, it's still a hell of a lot of fun.
Parasite Eve, the anti-gun and drug comments are hilarious now.

Super Mario RPG, Chrono Trigger and Cross, Golden Sun, Golden Sun The Lost Age, Mischief Makers, Paper Mario, Pokemon Ruby, Pikmin, Pikmin 2, SSBM, Megaman Legends, Megaman Legends 2, Fable The Lost Chapters, and Maple Story are the first things that come to mind, but I'm pretty sure I have others.

I'm afraid I'm already aware of Skylanders.

As far as I'm concerned, everything starting from The Legend of Spyro are not real Spyro games. I would rather play Enter the Dragonfly than LoS. And even I will admit that Enter the Dragonfly was awful.

Ah, i forgot they remade it for the Wii... Then i guess my favorite game besides okami would be Portal... though that seems to mainstream so my answer is snake. Yes, snake, i know more people have played it than anything but ive spent more than several hundreds of hours playing it so im going to nominate it as best game xD

I have exactly 1 of my 10 favorite games on this console generation, so I'll just name that to save time. Valkyria chronicles is the name, and it is also my favorite game.

Pokemon Silver because it had more polish than the first set but still kept the pool to choose from fairly small. Also, LUGIA!

Kirby Superstar, one of the few co-op games on the SNES. My brother and I would play those games over and over again and since Great Cave Offensive was a really hard treasure hunt type game (at least to a 10 and 7 year old) it provided a great amount of replay value.
