Pretty simple, really.
For me, I usually tend to finish games eventually, even if I do drop it for a year and come back, it's rare that I simply cannot be bothered to finish a game.
But if I don't finish it, it'll be either because it's crap, or because it's too hard for me to finish. I've been gaming a long time, but while I'm not really crap at games, I'm not brilliant, and as such, dark souls and the binding of issaac have joined my list of games that I will play, and continue to play, but may never actually finish.

Dark souls is infamous for it's difficulty. But the normal enemies don't usually bother me. The hollows and knights are challenging, and it's one of the reasons I like dark souls that every single battle feels life or death. There are no mudcrabs here, no enemies that you practically laugh at for thinking they can take you on. It's the bosses that get me. The long, greulling fights with barely any time to heal. They stop me in my tracks, and before long, I get tired of running the same gauntlet of normal enemies, getting to the boss, dying, rinse and repeat. Of course, defeating a boss is satisfying as hell, but I just end up thinking that eventually, there'll be a boss I simply can't pass. A boss who is possible to defeat, no doubt, but far, far out of my gaming skill.
As for binding of issaac, well, it's the roguelike elements that get me. The fact that my past attempt at it will make little to no difference to my next attempt. In a way, it's refreshing, and hard to get frustrated. Some games are simply so hard that frustration is pointless, you will die anyway, the fun is simply finding out how far you can get. The annoying part is when I end up with really good items, and think I have a serious chance this time, then, out of nowhere, luck screws me over. A really hard boss in my way, a powerup that didn't help at all, something like that, and I'm done. I enjoy it, so I'll keep trying, but I severely doubt I will ever actually finish it.
