Although they've all been mentioned, for me I find Oblivion and Mass Effect both (potentially) very relaxing, and Harvest Moon is constantly very relaxing for obvious reasons.

Music catch 2, some flash games where you catch musical notes with your mouse.. its relaxing but it serves no real purpose

I'd have to say the easier levels of Rez...turn up the bass and just get lost in it...

Also, Katamari Damaci, any easier level where you're not fighting a clock...just rolling around and gently growing...

The only example I can think of is Rez. Man was that a relaxing game... I need to go find a copy of it.

NGII you see I am brilliant at it, so slaughtering everything in such style makes me happy, Prototype does the same (I will get 1k GS on that game).

Nothing more relaxing then killing people in chicken suits with hundreds of other people surrounding you.

I think it would be Legend of Zelda: The Wind Waker, in the sailing scenes. They calm me down before the attacks.

Katamari games. They make me happy with all their colourfulness and straight-out odd, but uplifting wierdness. Also, the gameplay is simple, but it's satisfying to build a huge ball.

Shadow of the Colossus.

Going through and finding the colossi calmed me. Why? I have no idea it just did.

Mirrors Edge, I love just running through the levels trying to find that particular flow that allows you to move with out breaking pace, while most of the time quiet music plays in the background.
