Soy sauce most certainly does not need to be refrigerated, I'm pretty sure the high salt concentration make it a disinfectant. Same deal with mustard, and probably ketchup. Heinz says that ketchup is acidic enough to be "shelf stable". Commercial mayo is made with pasteurized eggs and vinegar. It's high acidity, owing to both vinegar and lemon juice, make it pretty resistant to spoilage. When I was living in Japan it seemed a lot of people didn't bother refrigerating their mayonnaise either, which was particularly puzzling to me since I thought the stuff contains egg.
