Mahou Sensei Negima. It's a manga you'd have to read, and yea it's a bit long. But it's worth every single second.
The manga is good, but what I've seen of the anime looks rather shitty...

Is it?
The anime is rushed and doesn't cover enough of the manga, as does the second anime which is based off the OVAs and as such, more truthful to the manga. Trust me, much like bleach, if you only watch the anime to see your favorite fights animated and just read the manga, the story is that much better for you.

Another great anime/manga to pick up is Mirai Nikki. It's like deathnote on speed. I'd usually recommend reading the manga of any series I offer though, since I tend to read the manga scantilations more than I watch the animes.

Also, avoid gantz<3 if you have a weak stomach or don't have thick skin. Otherwise you will alternately cry, want to puke, and rage.

Higurashi no naku koro ni. Watch it, its one of my most favorite anime.
Both great and also try Majin Tantei Nougami Neuro for a great commedy/detective show with demons!

Baccano! is worth-watching. You seem to have a preference for violent/acton shows and this one fits the bill. Think of it as pulp fiction, set in the 1930s, where one of the side stories involved alchemists.

Cowboy Bebop. Bounty Hunters in space, set to jazz. Excellent writing, excellent direction, excellent series. The high-water-mark for good anime.

RahXephon. A coming of age story about a youth who pilots a giant singing robot. (It is better than it sounds, honest). by the same studio as Eureka Seven. The first 5 episodes are a bit dense, but it is oh-so-rewarding.

Ghost in the SHell: Standalone Complex. VERY complex but brilliantly animated and fascinating to watch. Laughing Man for President of the Internet.

Requiem from the Darkness. An author follows a trio of apparitions as they mete out justice to the wicked. Stylish, lurid, and scandalously entertaining.

Boku no Pico. Watch it. Just watch it. And make sure NOBODY IS AROUND WHEN YOU WATCH IT. YOOOOOO! [http://slumz.boxden.com/f429/dont-watch-anime-called-boku-1161642/]

Monster is the only anime I've seen that has substance to it, that feels like it wasn't made with children in mind. I highly recommend it.

Calumon: If you want you could watch the one with me. Digimon Tamers! ^^
NO! BAD CALUMON! NO ADVERTISING!

OT: I am not into anime yet I became totally addicted to Soul Eater.

Although watching it to the very end of the first season will cause Lost level rage for the ending and the current lack of any season 2.

1. Serial Experiments Lain, It's The Second coming of Jesus, I even did a review!!! [http://www.escapistmagazine.com/forums/read/326.214642-Sacmans-Sac-tastic-Anime-Review-Serial-Experiments-Lain]

2. Ergo Proxy, A lot of people say Ergo Proxy is an anime you have to think about but on reflection it feels more like a parody or satire of over pretentious anime like Eva. The last episode is even titled "Deus Ex Machina."

3. Elfen Lied, What this show does is hard to explain. It's gory and bloody and filled with tasteless nudity but I loved it. Elfen Lied just got me so attachedto the characters that come the end I cried...

4. Welcome To The NHK. It's hard to explain... I mean it's really the only slice of life I've ever loved this much but I'm just not exactly sure why. It could be the pitch black humor, the realistic characters, the social satire, or even the brilliant writing. Honestly, however, I think it's more the fact that Sato's, The main character's, situation hit's very close to home for me...

5. FLCL. I hate to sound like everyone else but FLCL is 6 episodes of awesome craziness!!!

6. Blue Sub No. 6. I used to watch this as a kid on Toonami and I really didn't get it but going back to watch all 4 episodes now I can safely say it's one of the most polished OVA series I've ever see, with an amazing soundtrack, great action, great animation, a standout art style, and one of the most coherent messages about human nature I've seen in anime.

7.Gundam The 08TH MS Team. It really stands out for me because it's one of the few Gundam series that give a general sense of fear because the action is unpredictable and the characters really endear themselves to the audiance...

8. Paranoia Agent. It's a truly great murder mystery that keeps you guessing at every turn but look past that and you'll find a very intriguing deconstruction of the human mind...

9.Gungrave. Possibly one of the most underrated shows I've seen. Gungrave is a truly great story about friendship, love and betrayal without ever falling into cheesiness the great animation, spectacular fight scenes and well thought out character development doesn't hurt either.

10.Higurashi No Naku Koro Ni. Despite having no real plot, since I consider Kai and Rei to be non canon, Higurashi is one of the most atmospheric and frightening shows I've ever seen. It constantly keeps you guessing and always gives a feeling of paranoia and dread...

Cowboy Bebop.

I'm surprised it's not on your list already.
This, for real. I would tell you to watch this even if you asked about trying a new food or something. Go watch it, right now.

I watched JoJo's Bizarre Adventure about a year ago and loved it. I highly recommend it. But watch subbed, dubbed is hilariously bad.

I'll recommend three: Tengen Toppa Gurren Lagann(needs no explanation), Fate/Stay Night(What I am watching right now), and Fairy Tail(an ongoing series that has yet to be dubbed).

As always, I will recommend Clannad and Clannad After Story. Not only is it simply a beautiful anime, it is by far the most touching anime out there. You will cry, and you will cry lots.

EDIT: Also, like the other people said, make sure you watch it with subs.
Seconded. ALWAYS watch Japanese high school stories (or pretty much any series set in ACTUAL JAPAN) with subs. It's just nonsensical watching them in english. Thing like Hellsing which are ACTUALLY SET IN AN ENGLISH SPEAKING COUNTRY ar a different matter, but distinctly Japanese series always lose something in translation. And there isn't an english voice actor in the entire industry capable of convincingly voicing a Japanese highschool girl.

Now, to suggest something I seriously doubt anyone else has already, watch GANKUTSUOU. One of the most jaw-dropping anime ever made, it's a psychadelic sci-fi retelling of 'The Count of Monte Cristo' (the greatest revenge story ever told) from the perspective of one of the minor characters from the original- and it's utterly brilliant. It was pretty big a couple of years back, but people seem to have forgotten it already despite it being a modern classic on par with Cowboy Bebop. Here, watch this:
