Of the ones up there I'd say either ME2 or Red Dead. But I want to wait for Fallout New Vegas and Halo Reach before I decide anything. Halo Reach is actually looking good, so it could turn out to be a really good FPS game. I don't feel like ME2 really pushed the boundries in anything, it just did a lot of stuff really well. Excluding good character development I felt like the game was good, but the story just wasen't concentrated on enough. There are really only 3 main story missions, and everything else felt like a side quest. I felt like it lost the feel of ME1. It was all about the story and the characters journey through the story in ME1. ME2 felt more like you already know exactly how the game is going to end, all thats left to do is drive your ship around the Galaxy and pick some people up.

Mass Effect 2, Starcraft II and Halo: Reach are the only real options on that list.
Mario is a good game, but it just lacks compared to the others on that list. Red Dead is good as well, but its terrible multiplayer will hold it back.
As much noise as people make about it, GT5 is a racing game, and at the end of the day no racing game is going to beat out a shooter or RPG or RTS for GOTY, particularly when its competition is Halo and ME and SC.
Little Big Planet 2? Beat Halo? ME? SC? Boy, you do have high hopes don't you?
And I highly doubt another CoD game will win a GOTY award after the disaster that was MW2 and how Activision has behaved since then. Particularly since it has to go against Halo, and no CoD has withstood Halo. Even MW2, boasting as high sales as it did, still isn't rated as highly as Halo 3, and most say it only sold so well because Activision absolutely flooded the airwaves with ads, which they aren't doing with Black Ops.

So, half of the games on your list aren't out yet. I can't say if it's going to be game of the year if I haven't played it yet. In fact the only game on you list I have played is Red Dead Redemption... and my pick for Game of the Year so far is No More Heroes 2 besides that stupid fucking platforming section.
I'm going to say Gran Turismo 5. Maily because all GT games so far have been mind blowingly amazing.
