Put my hands up. Guns that could be reasonably concealed are not common 'round here, more likely than not anyone with one has gone to a lot of trouble to attain it (is is an officer). I figure if they've gone to all the trouble of sneaking a handgun, they aren't so likely to be going postal, more likely they are looking for someone in particular.

I would throw a coconut, pickle jar, hammer, or golf ball at him. He'd never see it comeing and a hit to the head will knock him the fuck out. Just need to get it on my first shot, or else I'm dead.

You left off the option that I would pick. Use someone else as a human shield, preferably a large person or a child so the shooter will either not hit me or hopefully think twice about shooting a child.

Its a beautiful day in where-ever-the-hell-you-live-ville you are at the "insert local shopping centre here" its very busy. But there is evil aloof, a man pulls a gun, and turns in you your direction. You cant tell if he will shoot or not. What do you do?

Me loved one comes first, I'd stand in front of them in a blink of an eye.

Not in Alaska..I already have a gun and I can carry it openly or concealed without a permit...but I wouldn't use the gun.
My pocketknife is so much more fun.
Just walk up,use one hand to push the gun up towards the ceiling and withdraw and stab with the other hand...training comes in handy.

Try and talk to him to calm him down or reach an agreement. Like "I'm just gonna reach for my wallet now. Just put the gun down, and I'll slide it over." Then, if it works, run like hell.

However, if there are more people there, I'd do my best to try and wait until he looks at someone else and then shank him in the neck.
