I didn't read all of the comments but I'm guessing that Goldeneye is on there somewhere (at least it should be). =-/ Goldeneye is one of those games that you can pick up at any time and still enjoy the game for how good it is and not just for the heavy wave of nostalgia that comes with shooting those enemies with the creepy faces and being able to be Oddjob in multiplayer.
The thing about Goldeneye is that if it came out now (The same way is came out in the 90's, not the remake) it wouldn't be considered that good. I mean, it is very much a simple first person shooter and the enemy AI isn't that good. At its prime though it was considered the king of FPS's.
I also want to bring up the COD games. Besides Goldeneye, I have never been much obliged to play FPS's. They were never really my thing. I have to say though, that Call of Duty: World at War and Call of Duty: Black Ops have to be two of the best games I have ever played. They have great, engaging stories, the action is well-done, in allowing you to do things that most things would put into cut-scenes, the voice acting is believable and full of life, and you actually (well, in my case) get attached to the soldiers that fight around you, and want to protect them from enemy gunfire. Because of all this I find myself so immersed in the game. I actually feel like I'm there, fighting Germans, Russians, Vietnamese, what have you.
Take it from me; for someone who doesn't much care for FPS I have fallen in love with two of the COD games, Call of Duty: Black Ops and World at War. In my opinion, these two games are some of the best games out there. You really get your money's worth in how much you enjoy the game.
