There are a few significant titles that everyone who calls himself a gamer should have played. Super Mario Bros. and Zelda: Ocarina of Time for example introduced or popularised many conventions you still see everywhere today.

When someone says "must play" they normally mean the experience is unique, but that doesn't mean jack.

I've never jumped into a pool packed full of puffer fish(s), and it's a unique experience I don't care to savor. =D

If I were to suggest a few I'd say Starcraft and Diablo II.

But, hey, nothing is set in stone with subjectivity being what it is.

Also, I'd say Breath of Fire or Lufia and the Fortress of Doom.

I think there's a few that SHOULD be played, depending on your experience.

For FPS, Play Goldeneye. Simply because it contains everything you'll ever need to experience.
For Online FPS, Counterstrike.
For MMOs, tricky...but Everquest. Simply because of the huge areas, the God battles and the wonderful music.
For RPGs, Balders Gate.
For Casual fun, Peggle.
For Team based Shooters, Team Fortress 2.
For Platforms, Mario. Hands down. Super Mario All-Stars is probably the best.
For Light-Gun, House of the Dead.
For RTS, Dune 2. No other game has come close to the sheer brilliance of the alleged original; although C&C is snapping at it's heels.
For Co-op games, Left 4 Dead (1).
For Storytelling above and beyond, Psychonauts.
For Space Combat, either Elite (the original) or Tie Fighter.
For Graphic Adventure games, the stunningly good Maniac Mansion.
For Text Adventure games, The Hitch Hikers Guide to the Galaxy (Even over Zork)

I'd say that's most genres.

P.S. I'm leaving out games like Half-Life, Portal and Mirror's Edge because although they are stunning; Gordon doesn't beat Jimmy Bond, Chell doesn't beat Raz and Mirror's Edge gives me hideous vertigo :)

So by your standards, no, I suppose not.

That said, you HAVE to play Mirror's Edge on the PC.

Isn't that a good thing?

Also, what do you consider a should-play horror and survival-horror?

(I'd pick Fatal Frame 2 and Silent Hill 3, respectively, sorry, SH2 fans)

No. Everyone I've talked to agrees that the controls on console can be very clunky and difficult to work with while running at 30 km/h.

The PC mouse and keyboard work like a dream.
