I love cheddar, but it has to be the really sharp kind. Aged Canadian cheddar? Ain't nothin' better.

Leerdammer because it has holes, not just any old holes though, oh no! What you get in leerdammer are friendly and personal holes. They bring out the better side of you and brighten your day. Leerdammer holes are the sort of holes you could spend your hole (<< I'm really really sorry about this) life with and never regret it. The holes you get in Leerdammer are the most exquisite, delectable holes in the hole (I should stop soon, before someone gets hurt, shouldn't I) cheese world and while the rest of the Escapist is gorging itself on corporate, mainstream cheese and obeying their every command, I shall be eating Leerdammer.

Also... I just have to say this:

Child 1: Oh no! My mum packed cheese with holes in again. I hate holes!

Child 2: Well cut out the holes and leave them on the side of your plate!

I'm so very, very sorry...

I like American, not only because it's American, but because it is the blandest and most artificial of all cheeses.

The absence of a good Provolone makes me sad (although I suppose it counts as a smoked cheese). No veal or chicken parmagiana sub or meatball marinara (my sub of choice at Subway) is complete without Provolone.

My favorites:

Brie - subtle flavor. sensual. Oh God... (I think Yahtzee mentioned this in one of his vids. Not sure though.)
http://en.wikipedia.org/wiki/Brie

Gruyere - powerful smell AND taste. The cave-aged ones are the best, but smells the worst.
