My friend gave me the original Xbox version of Ninja Gaiden after I bought my 360. I played it up until I reached the first shogun on a horse, which is only about 30 minutes into the game, because it was so fucking hard. Then I tried it again a couple months later and beat him finally, only to have to face two shoguns on horses. So now it sits in a stack of games where it will stay until I muster up the resolve to try again or give it back to my friend.

And probably not what the OP had in mind, but Jade Cocoon has a pretty ridiculous difficulty curve. It starts off not easy but once you start capturing shit and figure out how to mix things into terrible little abominations and crimes against nature the game just drops from being "sorta not easy" to "Huh? There was a boss? All I see is a vague stain on the grass."

Trodlers on the SNES has a balls to the wall insane difficulty curve out of absolutely nowhere. And Cool Spot, but that game was adoreable and I could look past it.
No, I oddly enough had an easy time with Meganada. But abbadon. Fuck him in his fucking blobby eyes until he's dead. I've played through the game a few times (stopped due to a health problem on my latest playthrough where I was planning on beating Satan, I suppose I should restart that file) and I still have a hard as hell time with him.
Geeze, you lucky jerk. I had to grind insanely to beat Meganada. Get the Null Ailment mantras, Drain Thunder and Phys sheilds, Diharan every turn, and a single attack each round.
It was hell. But I ended up giggling like the crazy bastard I had become when I won.
If I remember right he had an easy pattern. It just took me fucking forever to beat him and I ended up using a ton of items by the end of it. But it wasn't hard it could have been though, oh boy could it have been. I still haven't done any of the bonus bosses in that game other then the angels (Fuck the fight where you have to fight all of them at once, that one is a pain in the ass, it's obnoxious as hell). I kinda wanna play through those two games now.
I breezed through all of DDS1's bonus bosses except for Kohryu, who I just didn't have the patience to sit through a battle that long. For 2 I missed the angels and I didn't dare touch Shiva and Vishnu, and wouldn't let myself within a billion miles of the Demi-Fiend fight.
I might be a bit sadistic, but I'm not suicidal. It's the same reason I never touched Margret or Elizabeth in P4 or P3, respectively.

I'm going to sound weak but trying to beat Robert de Sable on asscreed 1 got to me. I was just so used to taking out my primary target and hoofing it

Mass Effect had a weird difficulty curve, if you ask me. The stupid walker thing on Liara's mission (the mission you're suggested to go to FIRST has you fight a TANK on FOOT) and Benezia always kick my ass.

I know I'm a little girl for suggesting this, but Pikmin annoyed the shit out of me sometimes. It's pretty free roaming, so I guess it's not really a curve problem, but the first few beetle monsters you fight are easy, and then you run into a boss when you only have 30 Pikmin total and... Yeah. Then you have no Pikmin. : /

The most annoying part about difficult games is not the actual difficult part, but the wait between tries. Mass Effect was notorious for this, not only because of unskippable cutscenes (the previously mentioned tank fight), but because you have to stare at your character's body for a full five seconds before you get the option to reload, and then you get loading screens. If I can just retry instantly, difficult sections would be a lot less frustrating.

Mass Effect 1 on Insanity
I was able to get to to the end playing as an Engineer. Then I found it impossible to drive the mako to the little mass relay. I gave up.

holy fuck i hated that level so much i got past it but still it was hard

(more deaths than i had kills on my play through on casual)

Ninja Gaiden, then Demon's Souls. I was actually doing really well in it until I tried to get the world tendency items. Pure black Tower of Latria was the part where the game finally spit in my face and called me its *****. I still have yet to survive Rydyell, let alone one hit. Level 5-2 is insane as well. It's a poisonous swamp of perpetual death.

With the infiltrator it's still doable. With a class like the vanguard it becomes absurdly difficult.

Spyro the dragon on the Playstation 1 it was rated G 8+ I got it when I was 6 and now 10 years later I finally finish haunted towers. One of the hardest levels ever.

Okami had some pretty hard boss fights. I'm raging over Insanity Mass Effext 2 atm, but it is not the hardest thing I've ever done. That award goes to:
The end level of Supreme Commander 2 on Hard. Hurray for Paragon structures...

Any advance wars game..... I'll spend an hour clocking half the campaign then spend the next 3 months figuring out a way to beat 1 level.... then clock the rest in half an hour, difficulty curve goes damm near vertical then crashes....

Ninety nine nights. It was ridiculous until you got to the last boss. Then it was just impossible.

X-Com: UFO Defense has a pretty steep difficulty curve, and I say this even in light of the fact that I am terrible at it. The missions start off easy and the basic aliens are easy to kill, but once you play a Terror Mission and the aliens start getting bigger, it is just SO HARD to get out without any casualties.

For a game which didn't involve evil older brothers, I'd likely go ahead and say Ninja Gaiden, i found that hard. Or perhaps The sims, i say this because of the immense difficulty of trying to stop myself from killing my residents every couple of minutes, I failed to stop myself every single time.
I couldn't help but laugh, "Mudcrabs were a threat" hahaha. That IS cruel.
