Perhaps, but shouldn't the waters be tested as a friend first to see if she really has changed? The guy's been hurt before by this same person, so caution, if nothing else, would be advisable.
That would be the smart move, I feel stupid for not thinking about that.

Anyway, I would advise extreme caution. Upon severing the cut with her, sorry to sound offensive, "Jesus Freakout" she may become perhaps a little bit too....clingy. I would suggest you to set a time for you and her to meet up and chat. Thats it. Don't plan for a movie, perhaps a meal or something, but nothing special. Chat with her. Feel out where she stands, and how she really feels about severing her religious ties. If it makes her miserable, then you should advise her to go back to it, and you two could perhaps be just friends.

You need to test the waters, but do so with a plan to leap out of the waters if they turn out to be boiling hot.

Thats the best I can think of.

So, Escapist, what the hell am I going to do?

I had feelings for her and she did for me too, but that one flaw was the big deal breaker for us (including the fact that she became obsessive)

But now she says she's alright and realizes her mistakes. What should I do? Its been over a month since I last saw her so maybe she really isn't crazy anymore.

I'm thinking about just forgetting her and moving on like we did before but I just don't know.
Speaking as a fierce anti-Christian, any opportunity to encourage her apostasy should be taken at full bore. Atheism, paganism, secular humanism, whatever sort of -ism you like (and yes, there is a VERY obvious semen joke waiting to be made there, I'm leaving it for the readership.)

(edit: although it goes without saying she is not just a "room full of crazy", she is the fucking Kremlin Full of Crazy.)
