You should definitely try :

Samurai Champloo - nice samurai anime, looks good, has good voice acting, nice characters and some of the best fights in any anime

Darker than Black - nice dark sci-fi/action anime, has some good action, well done characters...

Hellsing - vampires, action, gore.. sweet

I also loved Mushishi - great setting, nice characters and mini stories, but it's not for everyone, it's a adventure/mystery/fantasy/supernatural anime and don't expect any action from it, there's no fighting in this one, but it's just amazing in its own way.. just not for everyone

D.Gray-Man is also a preaty good one and you'll probably liked it since you liked bleach and fullmetal alchemist

Sword of the Stranger (or Stranger -Mukou Hadan-) is also great, best action anime to date I'd say but it's not a series it's just 1 movie

I guess there are more but I think this is good for now

if you're into mecha I'd sugest Mobile Suit Gundam 00 and Full Metal Panic I'm not into mecha myself but I still liked those 2

FLCL is an amazing 6 episodes
Excel Saga is funny as hell, if you have commentators notes on
Outlaw star is good
Ruroni kenshin is amazing
Trigun rules
if your into harem animes, Love hina and Negima
...oh one piece is pretty good
and just for the hell of it

Death Note, Full Metal Alchemist: Brotherhood (basically what the first series was supposed to be), Hellsing Ultimate, all the Sayonara Zetsubou Sensei seasons (you will laugh yourself to death0, Bakemonogatari (a MUST for all anime fans), Trigun, Samurai Champloo, The Melancholy of Haruhi Suzumiya, Clannad, Spice and Wolf (its really a great series), K-ON, Toradora!, Cowboy Bebop, Neon Genesis Evangelion and Seitokai no Ichizon.

And, for all you people who come on just to say that they hate anime, stop. We don't care if you hate it, but don't go spamming these threads with "Urr hurr, I hatezorz teh animez." Its bloody annoying and takes us nowhere.

Beck-Mongolian Chop Squad is amazing, especially if you listen to good music. And Neon Genesis is the anime by which you must judge all other anime. If you want someting that will mess you up, Berserk and Gantz are definately worth a look.

If ..And Out Come The Wolves were your favorite punk album or Pulp Fiction were your favorite movie, that might sound cliche too, but for a reason. Evangelion is unlike any other anime and not quite like any other story. The only thing cliche about it is the first couple of episodes and the traditional Japanese pop intro. It's popular for a reason. Don't worry, loving this isn't like loving Transformers 2.

Death Note is really nice if you like criminal investigation-like movies, except that it is at the "criminals" viewpoint. Its intriguing ^^ Oh, and it's not spread across 250 episodes or anything. Just 38(?) episodes at 20-ish minutes =P

Another one would be D.Gray-man which is also awesome, and consists of roughly 110 episodes.

Both are highly recommended from me =P

I don't like concentrating "Anime" into a single genre, for two reasons: One, 'Anime' is just a contraction for 'animation' and in Japan it literally is used for any form of animation (One time when I was living in Japan, I saw a misguided Anime Nerd ask the clerk for the clerks favourite anime, and started whining when the clerk gave him a copy of 'Fantasia' and saying that it wasn't anime) and secondly, like movies and books there are tons of different genres. When people ask me "Do I like Anime" I always feel weird because there is a lot of anime I don't like and a lot of it are the shows that most people think of when you say "anime," yet there are some Japanese Animations that I absolutely love. For example, Princess Mononoke and Innocence (I refer to it just as Innocence because I didn't like the first Ghost in the Shell) are in my top 10 movies of all time list.

To make it short, I'm very picky but I don't like to squeeze anime into a single genre. I just judge them on their own merits. Regardless, here's a list of Japanese animations I like.

Innocence (One of the best sci-fi movies ever made)

Death Note (Very clever and creative show with good animation and a great story)

Naruto/Shippuden (Forgive me, I will agree it can be annoying and the 'really big' fans of the show are annoying, but I got hooked on this show early because I saw it when it first premiered in Japan as I was living in the country at the time.)

Trigun (I actually haven't seen it all, but I love the setting and the characters)

Ghost in the Shell: Stand Alone Complex (A cool show, though I lost track after the ending of the 'Complex' arch.)

Princess Mononoke (Epic mish-mash of Japanese history and fantasy)

Spirited Away (Beautiful and a ton of fun)

FLCL (Insane but hilarious. I don't care for the action sequences because I don't like giant robots, save for the one in episode 5, but it plays a fairly small part so I forgave it. Plus its hilarious.)

Dead Leaves (Don't go into this movie without an open mind or a seat belt, you might get whiplash and your brain might hurt from being fucked so hard)

Grave of the fireflies (This movie made me cry buckets :'( Good though)

Paprika (This movie is creative, gorgeous, and very entertaining)

Tokyo Godfathers (A very fun comedy drama from Satoshi Kon, who did Paprika as well. Satoshi Kon's animation is by far the best in the industry next to Hayao Miyazaki, its so much more expressive and full of motion compared to most Japanese animations)

Paranoia Agent (Another Satoshi Kon, but this time a TV series. Fucked up, but awesome.)

Mahoromatic (Forgive me again, or kill me, but I liked this show. I know it's full of bad fan service and I know it's what you can call a "Chick show" but my friend Emma from Australia got me hooked and it charmed the pants off of me, so :\)

Hellsing (Cool show. A bit misogynistic to the point of offensiveness at times, but still cool.)

I can't think of many more right now.

Same I liked it. Also there is going to be FMA Brotherhood soon enough and that's gonna be good(heh... I already watched some Japanese episodes :D). If you really want to laugh bring "Heroic Age" to a non serious anima club/group of friends and laugh at it because the characters are so Corney and it is basically about a mentally impaired savior of mankind in outer space.

EDIT: Also, all these that I recommended (except Princess Mononoke, which is a 134 minute movie) are only one season long, so it won't take you forever and a day to watch them all.

EDIT AGAIN: Though I'd love to see more seasons of all of them released over here.

Holy hell that's the premise of Haruhi 0.0 I just thought it was like lucky star...
I'm gonna have to watch that.

Most of my recommendations were already listed, if you like something a little light-hearted with awesome renditions of classical music, I highly recommend Nodame Cantabile. Sure it's a romance at the core, but it's also very funny.
