Aim assist has never bothered me, since I never knew it existed until I saw somebody mention it on here a year back.
I still doesn't bother me because I have never noticed it in action. I guess that is what being incredibly into the action of a game does, it masks the noticing of any possible slight movement of the aiming reticle.
On the RPG thing: Whatever floats your boat. I like both linear and non-linear. I've played and like most game types and genres.
But to me, your immersion point makes no sense. The reason most RPGs are non-linear, is because it is the best way to achieve immersion because it gives the player a whole world to sink into and be wrapped up in. The Elders Scrolls games like Skyrim wouldn't really work all that well, because the open and picturesque world is what makes the game, the lore and the stories of the Elder Scrolls games wouldn't work if it didn't have those great non-linear worlds.
Besides, the reason such RPGs are set up in the ways you don't like, it is how most RPG players want their RPGs to be. They don't want to be told exactly where to go and what to do, they want to play the game and experience it on their terms.
