Some of the bosses from Dawn of War II come to mind... the Avatar of Khaine, the big Waaaaghboss and the final Hive Tyrant in particular. Ridiculously powerful attacks, and the feeling of accomplishing absolutely nothing as you pump enough ordinance into them to sink a fucking strike cruiser.

Also, the Elder God from Legacy of Kain: Defiance took me forever to bring down. A lot of health, powerful knockdown attacks AND your character also continually loses health due to not getting a bite to drink.

SNK boss syndrome, anyone?

Though that's usually more due to having stupidly overpowered moves/combos than actually being that tough.

Well, getting the last surfer on the river of lava might be counted as a boss.. First game and last to make me throw my controller away.

Pretty much everybody in the first Uncharted game. None of the henchmen had any body armor to speak of, yet it took like thirty shots from my AK-47 to put one of these guys down. It doesn't make sense. Thankfully Naughty Dog corrected this in Uncharted 2, which is an awesome game.

An unarmoured human boss Character in Uncharted 2 fought in a tight and linear environment, who can take several direct grenade hits, M4 assualt rifle clips and haymakers before going down (on normal difficulty), all the while using his own grenades, M4 and (far more powerful) haymakers against the much more frail Drake.

This correction applies to the rest of the game, which is truly awesome!

The mutant Brumak from Gears 2

I would say Tartarus from Halo 2. That ***** absorbs a lot of firepower.

Mew from Pokemon Snap. That bugger was hard to get a picture of. But it was totally worth it in the end.

The bosses in Soldier of Fortune Payback were way over powered health-wise. I could kill normal enemies with a single shot to the head or chest with even a 9mm pistol, yet the bosses could take six to eight close range shotgun blasts and ten several grenades or one boss that I remember- An entire M-16 clip (30 rounds) one grenade launcher round (attached to the M-16, a few normal grenades AND around half of an M-249 SAW 100 round magazine.
Also, the bosses in Ninja Gaiden (xbox) and Ninja Gaiden 2(360) were unbelievably hard.

I always felt like Yiazmat was a shark jumping moment in the history of Final Fantasy epic boss fights. I didn't bother taking him on as I found the whole idea insulting.
