A big part of me wants to say its because of Nostalgia.
Nothing will compare with watching old cartoons with the wonder of a child.
Granted since they replaced the great cartoons of the past with things like "CN Real" and Cartoon Cartoon Fridays with that fried piece of shit known as "Fried Dynamite", I'm not so sure.
One things for sure though, cartoons lost a lot of balls.
Remember Courage the Cowardly Dog? That show had balls, and if you tried to show something like that these days, shit would hit the fan. I remember its last episode... god damn that was sad.
Both "Perfect" and the one where he lost his parents to that dick of a veterinarian. Both those episodes taught me that no one is perfect, and fuck anyone else who tries to force you to be perfect. And in the latter, it taught me to love and cherish my parents. Because they can be taken away instantly at any time.
And don't even get me started on Megas XLR. Whoever cancelled that deserves to be mauled.

It's because they look down to children, not up. The old days had plenty of things children wouldn't get, but they kept them in anyway, and they were better for it.
Nowadays, everything is totally tailored to make sure that nothing that's too advanced for the kiddies gets in. Fuck that. How else are you going to learn?
I second this, todays cartoons are stupider. Just for kids, and not for adults, unlike back in the good old days of the sharp writing of the 90s. I'm not sure whether it's the kids or the cartoons themselves, but they're getting dumber. I don't think we'll ever see anything quite like this again
Anyway, not that I peruse cartoons much these days, but what little I see of them is enough to drive me up the wall. It may just be nostalgia (it usually is), but one will always find the shows they grew up with to better than those of today, for the most part.
As for my favourites (all "oldies", I suppose):
Mysterious Cities of Gold (yeh, that's the 80s here people)
Tiny Toon Adventures
Animaniacs
But yeah, cartoons of the 90's (and some from the early 2000's) were actually intelligent. On the surface they looked like some stupid randomness, but they were always well written, funny, and intelligent.

Not enough cartoons do that anymore. For instance, you want to know how I learned about The Most Dangerous Game? Johnny Bravo. Granted, there was some shit back when I was a kid, but it was at least better than what kids have now. We had X-Men: The Animated Series, for God's sake! What do they have? This. It's a mixture of a lot of things but I really want to say that a lot of it has to do with the current economic environment.
One of the big things cable has done is fragment the viewer base. Fewer viewers means a smaller functioning budget. A smaller budget means you're more liable to turn out crap than something properly good.
Mix this in with the current recession and you can understand why people are more or less aiming to just play it safe.
There are really not that many people able to develop the intelligent cartoon- shows like pinky and the brain hit the right formula. So did shows like Courage the Cowardly Dog and Animaniacs. In a more recent sense you can look at movies like Up! and really most anything Pixar has turned out.
In short, they're not trying to capitalize on a demographic. They're trying to make a movie. Or a show. People underestimate what kids can find palatable and as a result you can find a lot of shows that can be accurately summed up as, "Least common denominator."

Wow, that's amazing! Can't believe I never saw that episode before...
I love cartoons that are a little subversive, like Animaniacs.
My favourite for adult humour had to be Danger Mouse though, it wasn't rude or anything, just a lot of Goon Show-esque surreal gags that I missed as a kid, but laugh my tits off at nowadays.
I think its just that they are marketing cartoons more and more for younger kids. By the way my fave was Ed Edd n Eddy. It was the cartoon three stooges with great slapstick and a reflection on growing up.
I liked ed edd and eddy since it was the best Show EVER!!!
Also, Billy and Mandy as my first exsperence with cherecter development. While cherecters in a show like spongrbob, which i still watch at times, can be funny if you just tune in and never heard of it, as well as have no idea who the cherecters are, GABM's cherectars developed from some kids befrending the grim reaper to a univerce of its own. After establishing who each cherecter was, the show started have cherecter who have never met play off each other. which ends in laughs. Altho they did try to jump the spongebob band wagon, as someone above said, By making fred fredburger. altho he is still to this day the best spongebob ripoff to date.

Hey, I like the Super Hero Squad Show! It's a funny and satirical look at the Marvel Universe and has made me laugh a good number of times!
Also, As cool as the X-Men Animated Series was, I find myself preferring X-Men: Evolution a bit more, for the good fights scenes and good plots. Hated Batman:TAS, couldn't get into it, but I really like Batman Beyond... I need to find a copy of Return of the Joker uncut someday..
Oh man, I can believe I forgot about my dear Megus XLR! The show that got canceled for having a terrible role model as the hero. I still use that phrase from the theme song, "Chicks dig giant robots."
Oh so many memories. I remember they actually had a button that said "Deus Ex Machina" or "Five minutes left in the show" it was a great series.
i think every cartoon u just said you liked, i viewed as a peice of crap, so maybe u shouldnt take advice from me, but i say that you should either watch anime, or stick to live action.
We don't feel like taking advice from Otaku fanboys so no we don't need your advice. If you want my advice though here it is. There is absolutely nothing that makes anime inherently superior to American cartoons. Gundam Wing and Batman the Animated series were equally excellent shows and their geographic origin point has no impact on the initial quality of a cartoon.
