I can't narrow it down at all so I'll just put some of the ones that have given me the most fun.

Multi player games:
Street fighter series, arcade cabs (especially, II TURBO, Third Strike, and Alpha 2)
Marvel vs. Capcom
TIMESPLITTERS!!!
Mortal Kombat II (arcade) and Trilogy (Sega Genesis)
King of Fighters series (2D)
BUSHIDO BLADE!
Boom Bots
Battletanx
STARSIEGE!!!!!!
Extreme G
Out Run
Initial D
ARC!!!!
STAR FOX 64!
Burnout series
Power Stone
BOMBERMAN!
Counter Strike (all versions)
Team Fortres (All versions)
DIABLO!
Command and Conquer (select versions)
Warcraft
STARCRAFT!
HOMEWORLD!
DAWN OF WAR!
QUAKE!!! (All versions)
Unreal Tournament
Magic: The Gathering (through Urza's Saga, that's when I stopped playing. Still got some great Alpha cards too)
RAINBOW SIX! (especially Rouge Spear)
JANE'S flight sims! (Especially F-18, and IAF)
FALCON 4.0 (Amazing multiplayer battles)
North & South (My very first tactics videogame)
VIRTUAL ON!! (Arcade and Saturn)

This list is getting wayyyyyyyy too long so I'll stop there but rest assured there are so many more that have given my friends and I years of stories and happy times. The single player games are an even bigger list so I'll hold off on those for now.

Edited so I could pop in D&D (rolling twenties since 1992), Warhammer, Warhammer 40K, Battletech, and recently, War Machines.

3) Deus Ex
4) Tribes
5) Counterstrike: Source

Legend of Legia for the playstation one, i will gladly make love or get someone to make love to whoever gets me an Australian released copy of this game, it was epic, i would play this gladly over any modern day RPG game, look it up, watch some vids on it, it was an awesome game to me, and it has few games that reach the standard that this game set for me when i played it

Shadow of the Colossus, Okami, Star Fox: Assault (Yes, I liked the on-foot missions, sue me). Judging on how much I'm looking forward to getting it, FF XI might show up on the list in the future.
If I had an extra 15 hours a day to throw into gaming without disturbing the rest of my life I'd play FF XI..

Prince of Persia: The Sands of Time

Incredible game, great puzzles, fantastic story, the two strongest and most real characters I've ever seen in a game, and the best platforming I've ever seen. Its also the one game thats brought me so, SO close to bursting into tears.

I will say, the combat is the weakest part of the game. It can get a little repetive at times. However, it's a lot better than many games, it's just not quite the later Prince of Persia titles or God of War and so on. The rest of the game is perfect, so personally I think it makes up for it.

EDIT: I feel like I need to put in my top five...Don't know why, but here it goes.

5.Braid
4.Team Fortress 2
3.Psychonauts
2.Portal
1.Prince of Persia: The Sands of Time

It's either Grand Theft Auto IV or driver, but I prefer driver. In driver people don't look like they want to kill you. Driver is all about driving, only driving. It has a really cool replay editor, fun driving games, especially carnage where you have a whole minute to cause enormous damage to all innocent drivers. Driver is without a doubt, the best video game I've ever played!
