A friend of mine has been spamming his smithing and pickpocketing by paying for training then immediately stealing the money back. Wash, rinse repeat. You can only train 5 times per level but he was gaining a level of pickpocket each time so levelling up before he ran out.
I try to avoid it, but if I've been trecking back and forth over the same bit of ground several times I'll often get bored and skip it. I fast travelled everywhere in Oblivion, and my experience was worse for it so I've consciously tried to do it as little as possible in Skyrim
I found the initial customisation a bit overwhelming, and never really tweaked afterwards apart from a few new suits, so I'm not really bothered about this at all. As long as the gameplay is as outrageously over the top as ever I'm happy.
