Spice and wolf the pacing is slow but it's actually rather intellegent, flows moderatley well and unlike 99% of anime did not make me want to take an icepick to whomever wrote the dialogue/characterisation. And I fucking hate romance as a genre in just about everything when its so overly hammy or constantly fucking dragging or not blowing stuff up every five minutes.

Well, I would suggest anything by Takahashi Rumiko (Ranma 1/2, Inuyasha, Maison Ikkoku, etc.)
They're pretty fun, good stories, and likable characters.
Kimi Ni Todoke is nice too, more realistic characters than you see in most Shojo, and the storyline is kinda sweet...

But really, an interest in Twilight doesn't suggest a taste for cute or sweet storylines.
Show her Rosario+Vampire, she'll either squee over Tsukune in vampire form, or she'll get freaked out by the ecchi and never talk to you again.
Win/Win, in my opinion.

If you find a review for the anime and the review has anything that resembles "KYAAAAAA! KAWAI!!!!!! XD" in it, show it to her.

Plus it has a feel good ending!

Maybe start with something like Ai Yori Aoshi, Fruits Basket or His and Her Circumstances.

If she's really into Twilight, maybe Tsukihime... only it's not terrible like Twilight, so you might like it too :)

I'd suggest "girly" anime like Fushigi Yugi. If you want to throw her for a loop, though, try Revolutionary Girl Utena.

Also, anything by Studio Ghibli.
