Call of Duty: World at War has some incredibly powerful music:
Sergeant Reznov was so awesome he got his own soundtrack.
This song represent pure Russian badassery. Almost makes you feel your right there as they mercilessly crush the last remains of the German forces.
The games few all-vehicle missions. Incredibly powerful beat, up a bit too... techno for a WWII game imo.

A Wonderful Guy by Tex Beneke (on GNR in Fallout 3). Everytime it comes on it just makes me laugh and I love it. Which is actually fairly odd considering I'm a metalhead.
Come to think of it, I really like all of the Fallout 3 music. I usually tune most music out when I'm focused (aka most games I play) so I don't notice it, but when just wandering around the Capital Wasteland, it's fun to tune in into GNR.
Too many great tracks for me to pick a single best one.
However, I'd probably say that as composers go, Eric Brosius is the most capable at creating music. (Thief series.)

I LOVE Snake Eater from Metal Gear Solid 3, it's the best game theme song I can remember, suited the game so well...
All of the Devil May Cry 3 music, and The Time Has Come from DMC 4. Again it just put's me in the right mind set for the game.

I love the soundtrack to castle crashers, especially during the ninja fight. I also loved the music when you open the giant chest at the end of a boss fight. so rewarding.
