Really, It's a case of, if you was living in the Pokémon universe, which I'm assuming to be around Pokémon you'd have to be.
Have you ever noticed a genuine real-world animal in that universe?
I haven't.
Now for the series, I think the only actual animal I saw in that was a flock of birds which may or may not have been just a flock of flying pokémon.
Also consider that in Pokémon (the series) they eat rice, and meats, it's never really looked at in great detail what these meats are, they're often named as the dishes they happen to be associated with in the real world, but If there are no noticable real-world animals...
Where do these meats come from?
I can believe that vegetables are grown and eaten, wheat based foods are harvested and made, so bread and rice are possible.
But Meat, without real animals to be bred for slaughter and consumption, you'd have to almost certainly begin to think that the populace of Pokémon (The meat eating populace at least) Ash included do eat the very animals that they swore to venture out and befriend.
So, would I eat Pokémon?
If I didn't want to spend of my life living on rice and bread, you can be sure as fuck I would.
