Well KOTOR had a fantastic story, but it's gameplay has aged terribly (was ok at the time, but nowhere near brilliant). TOR is my personal choice, but that's because I love huge open worlds and throwing Star Wars into that with TOR is almost perfection for me, especially when you consider the replay value of MMOs.
My perfect Star Wars game would be a Morrowind/Oblivion-ish game (huge, open, free world, but would have to be unprecedentedly big to encompass at least several planets without making any of them small), played in 3rd person, with the freedom/combos of Prototype, with a rich, expansive story that doesn't put aside side quests (think of KOTOR+Morrowind mix).
Sadly, such a game would have to be an MMO to justify the sheer amount of space and MMOs are currently mostly stuck in WoW-mode. Hopefully, we'll start getting MMO third person fighters/shooters at some point, where that scenario might just become viable.
