A Clockwork Orange (provided they're not, y'know, five) is a definite must.
Pulp Fiction as well.

I'm tempted to also say "Citizen Kane," as cliche'd as that sounds, the movie is just phenomenal.
I've NEVER EVER heard of "A Clockwork Orange".. Fo serious.

I am working my way through it. Current tally at 113 (of 250). Well worth it for any cinephile.

Anything by Quentin Tarentino, because he makes some of the most thought provoking movies ever, and not to mention they are extremely enjoyable *cough* kill bill *cough*.
Now, by thought-provoking, you meant brain poison. Right?
No because many of Q.T's movies, give you a fantastic ending, but then you start to think about the ending more and more, and realize, what if the ending didnt mean this, but actually meant that...

EDIT: i forgot, just watch the ending of Reservoir Dogs...you never really know what happens
to mr.pink, because what happens, happened off-screen
Wow, I just watched it again and I didn't notice that the first time. Thats some interesting shit right there

I'd say Seven, Watchmen, Back to the Future, Fight Club, Snatch, The Godfather, A Clockwork Orange, Monty Python and the Holy Grail, Batman Begins, The Dark Knight, Saving Private Ryan, Oldboy, Toy Story, The Lion King...hell, there are so many gems out there, and it makes me sad people still mindlessly flock to movies like Twilight. Ugh.

To be honest, thats just off the top of my head. I'm sure I've missed a fair few.

But if you haven't seen all of those?

Go. Watch. Now.

My personal favourites? Well, you will never convince me that there any better two films ever made than "The Godfather" and "The Empire Strikes Back".

Three Colours:White, Blue and Red. Amazingly good pieces of world cinema.

More popular cinema I'd say the Blade movies and Gladiator.

Avatar, because the environment and the sets are incredible. Not too crazy about the plot but that isn't really the thing to focus on when you watch it.
